Description
Unmalted barley pearled before it goes in the drum, so the chaff that carries most of the harshness is off the grain before it ever meets the heat. What is left at 1200 EBC is coffee, toffee and a dry, faintly smoky finish. Dingemans cap it at five per cent, and in a dry stout that is already plenty. Their own spelling of the name is Pealed, and it is kept as they sell it.
