Description
Refined sugar with cane molasses stirred back in until it is damp and dark — toffee, liquorice and dried fruit, and far more flavor per pound than demerara. Three or four percent of the weight is water and almost all the rest ferments, so it yields near 44 points per pound. Five to fifteen percent suits an old ale, a strong mild or a Belgian dark strong.
