Description
Wet-smoked over peat at Crisp's Speyside maltings so the smoke reaches into the kernel rather than sitting on the husk. Sold at 15, 25 and 50 ppm phenol, so what it does to a beer depends entirely on which you buy. Crisp quote up to 100 % because they are selling to distillers; the ceiling here is a brewing figure. Neither color nor diastatic power is published for it and both here are class-typical for a pale distilling malt.
