Description
Made at the Tivoli maltings in Hamburg rather than in Norfolk, and specified as a continental pilsner malt: lower extract than the English base malts, more nitrogen, and a modification range that suits a decoction or a step mash. The Crisp malt to use when the recipe says German pilsner and means it. No enzyme figure is published, so the one here is class-typical.
