Before you use it
Seek out the small pale Indian variety rather than the large European one — it is markedly more citrus and less soapy. Crush the seeds just before use; ground coriander from the supermarket has lost most of its aroma.
Description
The classic witbier spice, giving a lemony, faintly peppery lift that plays off wheat and orange peel. Also used sparingly in saisons and spiced winter beers.
