Before you use it
It is not the same enzyme as Clarity Ferm — a broader endo- and exopeptidase from Aspergillus niger and Bacillus subtilis rather than a proline-specific protease. Store it cold, never freeze it, and recap immediately; activity fades once the bottle is open. Best between about 10–20 °C and pH 4–6.
Description
A CellarScience protease that cuts haze-active proteins so they cannot later bind hop polyphenols into chill haze. Dosed at pitching, it works through fermentation and typically leaves barley and wheat beers testing under 20 ppm gluten as a side effect.
