Before you use it
Add it at pitching, not later — it needs the whole fermentation to work. It does not replace a kettle fining, and gluten-reduced is not gluten-free: always test if you are brewing for coeliac drinkers. Keep the vial refrigerated.
Description
The White Labs proline-specific endoprotease (DSM Brewers Clarex) that hydrolyzes the exact peptide bonds chill-haze complexes form around. Prevents haze without stripping foam, and is the usual route to a gluten-reduced barley beer that still tastes like beer.
