Description
Spelt is the hulled ancestor of modern wheat, and malted it gives a nutty, slightly honeyed grain note and a softer body than wheat does. Protein runs to 17 %, which is why Castle keep it under 15 % of a saison or a wheat beer. No diastatic figure is published, so that one is class-typical.
