Description
Pale malt cured over Scottish peat to a restrained 5-10 ppm of phenol — a tenth of what a whisky malt carries — and kept fully enzymatic at 250 WK. This is the brewing grade: Castle put it at up to 10 % in Scottish ales, porters and smoked beers, and peat asserts itself long before the ceiling.
