Description
Emmer is older still than spelt, and Castle malt it to 81 % extract at 2.5-5 EBC for Emmerbier and for the reconstructed ancient styles brewers keep going back to. Usable to 40 % as a wheat substitute. Protein is published as a wide 10-20 % band and no diastatic power at all, so that figure is class-typical.
