Description
Chit malt — barley stopped the moment it germinates — steamed and rolled into flakes, so it goes in without milling. The high-molecular protein a full modification would break down survives, which is what firms up the foam and the body. Up to 30 % of the mash bill; the steaming leaves it no enzyme of its own.
