Description
Buckwheat is not a cereal at all but a knotweed, and malted it gives an earthy, faintly bitter grain character nothing else provides. Castle allow it to 40 % of a specialty grist. They publish color, moisture and protein but no extract and no diastatic power, so both of those are class-typical here — and it is malted in a barley malthouse, so it is not a gluten-free ingredient.
