Description
Pale malt soured on its own lactobacilli, which is how a brewer drops mash pH without touching an acid bottle. Castle publish a wort pH ceiling of 5.0 and no extract at all, so the extract here is class-typical for an acid malt; a percent or two moves the mash, and beyond about ten the beer starts to taste of it.
