Description
A pale malt kilned on to 110 °C until it tastes of cooked bread, nuts and dried fruit. Castle sells it for abbey beers and dark Belgians, up to a quarter of the grist; it carries a bitterness when young that softens as the beer ages. Sold as Château Monastique in the United States.
