Description

Tart without any bacteria: this Belgian strain throws a large quantity of organic acids, but not lactic acid, so it tastes sharp while remaining a clean single-culture fermentation. Spicy and phenolic on the nose, very dry on the palate, and a useful corrective to the sweetness of a quad.
