Before you use it

Dissolve it in warm water before dosing — the powder balls if it hits the mash dry. A little extra calcium (around 20 ppm) helps replace what the tannin binds. Overdosing strips protein the head needs, so stay inside the 2–6 ppm window and pick mash or kettle, not a stacked double dose, unless you have measured the beer will take it.

Description

A brewing-grade gallotannin that both chelates iron and precipitates haze-active proline proteins. Used in the mash for flavor stability and in the kettle as a compact hot-break fining, which is why it turns up in hop-forward beers that need to last.
