Before you use it
Chips overshoot in a way cubes rarely do — start at the bottom of the range and taste every two or three days. Oak cannot be taken back out; an under-oaked beer can always be dosed again.
Description
The same charred, whiskey-soaked American oak as the cubes in the format that gives it all up in days rather than months. Chips are the choice when a stout needs to taste barrel-aged before the end of the month, and the format to watch hardest, because char and spirit both arrive faster than the vanilla that balances them.
