Description
Raw barley taken straight to the drum roaster without ever being malted, so the husk and protein survive the heat intact. A few percent turns a beer near-black and lays down the dry, ashy bite and thick tan head that mark out a dry stout. The unconverted starch it carries needs a high-DP base malt alongside it.
