Description
The same Central Texas red winter wheat, sold unmalted: protein for haze and foam, a bready dryness, and no enzyme of its own, so a well-modified base malt has to do the converting. Witbier and lambic want it; expect a sticky lauter and rice hulls past a quarter of the grist.
