Description
Base malt cold-smoked over mesquite, which Blacklands describe as tasting of Texas brisket — pungent and meaty where Bamberg beech is sweet. The smoke goes on without a kiln, so the enzyme survives and this can be the whole grist of a smoked lager or porter; a tenth of it is already assertive.
