Description
Cane molasses cut back with refined syrup: nearly black, bitter with liquorice and burnt sugar, and far more assertive on the palate than the same weight of dark invert. About a quarter water, and enough of the solids are ash rather than sugar that it yields near 31 points per pound. Two to five percent builds a treacle stout or an old ale; much more and the bitterness runs the beer.
