Description
The middle grade at 20-30 ppm of phenol, on an analysis otherwise identical to the lightly peated malt — the peat is the only variable Bairds move. Medicinal and maritime rather than woody, and it takes over a beer at a dose that would barely register in a cask. The ceiling here is a brewing figure; Bairds quote 100 % for the still.
