Description
The bottom rung of the Bairds peating ladder at 10-15 ppm of phenol in the malt, which carries 2-5 ppm into a spirit and rather more into a beer. Pale, high in extract and fully enzymatic at 215 WK, so the smoke is all it changes. Bairds say up to 100 % because that is what a whisky wants; the ceiling here is a brewing figure.
