The Heritage Collection grade of Maris Otter: a point higher in extract than the standard lot, kilned a shade darker to 5-7 EBC, tighter on nitrogen and stronger on enzyme at 165 WK. Sweet biscuit for a best bitter, at up to the whole grist.
