Before you use it

It is not a substitute for tight oxygen control — once it is oxidized it can feed later staling reactions, so dose it into beer you have already packaged carefully. Boiling destroys it, which is why it belongs on the cold side. Keep the jar sealed; it browns in air and the brown powder is spent.

Description

A sacrificial antioxidant that scavenges dissolved oxygen and weakly chelates metals, used to slow the cardboard staling of packaged beer. Common in hop-forward beers that will sit in a keg or can, and as a partner to a mash chelator rather than a replacement for one.
