Nothing on this list is easier to overdo. At oak-like doses it stops reading as spice and starts reading as an air freshener, so start near half a gram per liter and taste often.
Description
A Brazilian hardwood that arrived in brewing through cachaca, giving cinnamon, tonka bean and gingerbread rather than the vanilla and toast of oak. Popular in imperial stouts, barleywines and dark Belgian beers over winter.
