Before you use it
It prevents diacetyl forming; it cannot remove diacetyl that is already there, so it is useless as a rescue dose in finished beer. A second addition at dry hop covers hop-creep precursors. Homebrew ALDC products differ about tenfold in strength: the CellarScience dropper bottle is its own entry, and a brewery concentrate such as Maturex is dosed by the datasheet. Keep it cold and do not freeze it.
Description
Converts the diacetyl precursor α-acetolactate straight to flavorless acetoin, skipping the buttery intermediate. It shortens lager rests and is now standard in heavily dry-hopped beers where hop creep would otherwise throw a late diacetyl spike. This is the White Labs homebrew vial, packed so that one vial treats a 20 L batch.
